| In Karakul lambs, with 30 Kg average liveweight, some indices on meat production were studied. The average dressing percent was 43.14%. The different anatomical parts of the animal were described statistically, showing a high variability. Each anatomical part of the animal was described as a ratio of the liveweight: the head is almost 5%; the skin 9.5%; the blood 4%; the liver 1.4%; the heart 0.4%, etc. The proportion of meat, fat and bone in the leg are 69%, 8% and 17%, respectively. The same components in the loin are 63.7%, 5.8% and 23.8% respectively. |
