Chemical composition, biological quality (NPUOP and NPU10) and protein value (NDpCal %) were determined in five varieties of soybean grown in Chile [Glycine max (L.) Merril] var. Amsoy, Chippewa, Shelby, Provar and Wayne, previously heated by autoclave during 30 at 121ºC. The five varieties of soybean studied, showed higher protein (26,0 - 33,5 g%) and fat (19,9 - 24,3 g%) content than other pulses, and had an average of 28,0 per cent protein calories. NPU10 and NPUOP values ranged between 57 - 71,3 and 28,6 - 44,3 respectively. |
