Content of glycerol, 2,3-butanediol and amyl alcohois in Chilean wines. Utitization of a method by gas chromatography

138 wines were sampled in wine - stores, from Los Andes (lat. 33º) to Chillán (Iat. 37,5°). Their contents of glycerol, 2,3 - butanediol and amyl alcohols were determined, through a gas chromatography method, adjusted previously. The content of glycerol varied between 7.1 and 12 g/It, in white wines, and between 5.2 and 12.2 g/lt, in red wines. The range of variation of 2,3 butanediol content observed in white wines was 312 to 723 mg/It, and in red wines, 341 to 676 mg/It. The content of amyl alcohols in white wines varied between 170 and 359 mg/It, and in red wines, between 245 and 345 mg/It.
