Effect of ram, occurring after commercial maturity, on the wheat grain

During 1981/82, 1982/83 and 1983/84, at the Quilamapu Research Station (Chillán,Chile), the eftect of ram previous to harvest upon mature wheat grain was studied. The treatments were different water quantities applied to standing wheat, considering natural and artificial ram. After harvest, the following parameters were evaluated: grain yield, hectoliter weight, grain hardness, flour yield. grain protein, sedimentation value, dough testing, water absorption, bread volume, crumb colour and texture. The wheat cultivar used was Andifen, with alternative growth habit. Hectoliter weight decreased significantly, as the amount of water increased, according to a linear model; R2 were 0.85; 0.93; and 0.96 torthe years 1981, 1982, and 1983, respectively. Others parameters, including flour yield, were not affected.
