VARIABILITY OF THE IRON CONTENT THROUGH THE WINEMAKING PROCESS OF GRAPES cv. PAIS

The iron content of grapes cv. País was determined since harvesting till the winery at Cauquenes Experimental Substation, 300 Km south of Santiago, Chile.
Road dust increased iron content of fruits located at the surface of the loaded truck after roading several kilometers and did not increase the total wine iron content substantially. The mainf contamination source was pressing before or after fermentation, reaching values of 6.00 and 6.07 mg/lt, respectively.
