CHEMICAL AND BROMATOLOGICAL COMPOSITION OF 28 POTATO (Solanum tuberosum L.) VARIETIES CULTIVATED IN THREE DIFFERENT LOCATIONS IN CHILE

A wide range of bromatological parameters of some potato varieties were studiend.
They constitute a set of potato varieties grown in three locations, namaly: Santiago, Temuco and Osorno.
The following parameters were studied: dry matter; total nitrogen, free sugars; starch; ascorbic acid, ash; and specific gravity.
Correlaciton analysis showed highly by significant differences (P < 0.01) between specific gravity vs. starch and dry matter vs. specific gravity.
Duncan tes, grave the following results. Highly significant differences for varieties for dry matters, free sugars, specific gravity and ascorbic acid. Highly significant differences between zones for ash and total nitrogen.
The results agree with those informed in the foreign literature.
