ABSTRACT
TOTAL IRON VARIATIONS IN MUST PROCESSED FROM RIELSING CULTIVAR IN CENTRAL SOUTH CHILE

In the Cauquenes Experimental Station, Maule, Chile, the influence of each stage of grape harvest, handling and crushing, of the cultivar Riesling growing under unirrigated condition, over the total iron content of must was meassured.
Results showed that from 8.9 mg/lt of total iron in must the physiological iron acounted only for 1.0 mg/lt, the rest was all due to contamination by the tools and machinery used during processing.
