ABSTRACT
QUALITY AND PROTEIN VALUE OF BROAD BEAN (Vicia faba L.) CULTIVATED IN CHILE

Chemical Composition, NPU10, NPUop, NDpCal % of raw and autoclaved broad bean seeds (Vicia faba L.) for white and Ningpo varieties are presented.
The protein content, refered to a 10% moisture level, is similar and high in both varieties with an average of 24.5 g%. The fat content is low.
NPU values for autoclaved samples of Ningpo and white varieties are 39.2 and 53.8 with protein values of 8.5 and 9.2 respectively. Heat treatment doesn't produce any effect in the protein quality measured as NPU.
