A method for the extraction of proteins from maize opaque-2 and non opaque on the basis of differential solubility was studied.
The fractions extracted were subjected to electrophoresis.
Maize opaque-2 showed an increase in glutelin, and a decrease in zein with respect to maize non-opaque, in the extraction process.
Cellulose polyacetate as a support of electrophoresis is rapid, easy to handle and of a high resolution.
Good separation of the water-soluble proteins (albumins) and salt-soluble proteins (globulins) was obtained. both proteins show a similar electropherogram in maize opaque-2 and non-opaque.
