An organoleptic study was conducted to evaluate reconstituted milks with addition of 12% and 18% natural milks fat hydrogenated fish fat and with and without butter serum.
It was found that the best treatments were milks with 18% fat and butter serum. Comparing both fat sources the panel found that the reconstitutes milks with 18% hydrogenated fish fat and butter serum was the best.
