In order to evaluate some wheat bread quality indexes (hectoliterweight, grain protein, sedimentacion value, mixogram, water absorption, development time and bread volume), three wheat varieties Candela-INIA, Lancero-INIA and Saeta-INIA were sown at Ouilamapu Research Station every 30 days, from May to October, under irrigated conditions. Experimental results showed a strong genetic (variety) and environmental (date of sowing) effect on wheat quality. The best quality index corresponded to spring wheat variety and late sowing date. Only hectoliter welght reached the least values in late sowing time.
